Healthy Recipe: Bruschetta

Are you looking for something healthy, but delicious to serve at your holiday or New Year’s party?  Consider Bruschetta.  Made with a cup of tomatoes, this easy appetizer recipe packs a variety of health benefits.

In addition to being rich in antioxidants, tomatoes also have high levels of Vitamin A, which can not only improve vision, but also helps keep hair and skin healthy and strong.   In addition, tomatoes contain chromium which can help diabetics keep their blood sugar under control.   These are just a few of the many health benefits offered by tomatoes!

Ingredients

½ whole grain baguette (French bread), cut into 12 slices (or substitute 3 slices whole-wheat bread, each cut into 4 squares)

1 C fresh tomoatoes, rinsed and diced

¼ C jarred roasted red peppers

6 black olives, rinsed and sliced

½ Tbsp olive oil

2 Tbsp fresh basil, rinsed, dried and chopped (or 2 tsp dried)

¼ tsp ground black pepper

Directions

1.  Lightly toast baguette slices.

2.  Combine remaining ingredients.

3.  Top each bread slice with approximately 2 tablespoons of tomato mixture.
